I was thinking of what snack to prepare for the kid's meryenda. My work would usually finish at around 2 in the afternoon, At that time yung focus ko nasa kung ano ang dapat kung iprepare, ibake or iluto para sa meryenda ng kids. They would often wake up from their afternoon nap at 3:30-4 pm so It's a perfect timing for me to prepare some snacks for them....
... while browsing for some recipes I came by to a post sa isang FB group where in they were talking about buko pie. I suddenly felt my mouth water upon seeing the photo of buko pie. (PG much! haha) I had a feeling that my two daughters would love to eat Buko Pie, It will be something new to them since I always bake apple pie for them.
I have very simple Ingredients for a flaky, buttery pie crust. It's also very easy to make and I'm pretty sure you guys will love it.
1 cup All purpose flour
1/2 tsp salt
1/4 stick cold butter
1/2 cup cold water
1/8 cup white refined sugar
PROCEDURE:
1. To prepare the crust, combine flour and salt. Blend in butter thoroughly using a fork.
2. Sprinkle with cold water. Continue "cutting" with a fork until flour mixture forms tiny lumps. Form flour mixture into a ball.
3. Divide dough into 2 equal portions. Roll out to make 2 crusts. Cover bottom of pie pan with one crust. Cut excess.
4. Prick pastry all over with fork. Bake in preheated oven at 450°F for 12-15 minutes or until golden brown
BUKO FILLING
Young coconut meat
Coconut juice
1/4 cup refined sugar
2 tsp cornstarch
2 tbsp powdered milk
PROCEDURE:
1. Combine all ingredients and cook over low heat.
2. Continue stirring until thick. Pour mixture into pie pan.
3. Top filling with the second crust. Seal ends all around with a fork.
4. Bake at 400 °F until crust turns golden brown.
